Meat Loaf Minis

There are several meals that I love to make, but I've got this problem with always wanting to try a little something new each time. Meat Loaf Minis have been a family favorite for quite some time, so when I considered changing them up just a bit, I was careful not to push it too far. Simply changing my normal ingredient of refrigerated biscuit dough and using won-ton wrappers was the key and we'll stick with the new recipe now (especially since it's healthier)!

So here's what you'll need:
  • 1 pkg. Won Ton Wrappers
  • 1 cup ketchup (divided)
  • 1 egg (beaten)
  • 1 cup Shredded Cheddar Cheese
  • 1 1/2 lb. ground beef
  • 1/4 cup quick cooking oats (uncooked)
Using a muffin pan, place two won ton wrappers in each muffin hole. (Place the wrappers with one pressed down first, then follow by placing the next one at a different angle, so you'll basically have four different points sticking out of the tin.)

Next, combine the ground beef, 1/2 cup ketchup, egg, and oats in a medium mixing bowl. Mix well and form into 12 balls. Press each ball into each wrapper cup. Spread remaining ketchup on top. Sprinkle shredded cheese over the top of each. Bake at 350 degrees (F) for 30 minutes.

**You can always substitute the ketchup for BBQ sauce if that is more appealing to you.
