It's been one of those weeks where I'd made up my grocery list as always, but just haven't had a chance to get to the store yet. So on a night like tonight, you'll find me rummaging through the cabinets to see what recipe I can throw together with the ingredients I have on hand.
Tonight was an interesting one to say the least, but the recipe that ended up coming together from what I had on hand turned out great...at least that's what the family said!
Here's what we put together:
1 lb. ground beef
1 can refrigerated biscuits (10 pack)
4 tbsp. butter (melted)
Shredded Cheddar Cheese
Simply brown your ground beef; drain, then mix with the melted butter. Place one biscuit in each muffin hole. Press the biscuit up the sides (about 2/3's of the way up). Spread the bottom of the biscuit with 1/2 a teaspoon of ranch, next place a spoonful of your meat mixture over the ranch, and finalize by placing a pinch of the cheddar cheese on top. Follow these steps one more time to fill the biscuit (ranch, meat mixture, cheese).
Bake @ 350 F for 20 minutes.
They were simple, tasty, AND kid-approved! Enjoy!
